SERVING SUGGESTION:

How to bake RUF Lemon Cake;

For the dough:

150 g soft margarine or butter
3 medium eggs
100 ml of liquid milk or Powder milk mixed with 100 ml of water
For the glaze:

20 ml (approx. 2 tbsp) lukewarm water
Make the dough

Preheat a conventional oven to 180 °C (fan approx. 160 °C).
Put the baking mix, soft margarine or butter, eggs, and milk in a mixing bowl and mix with the electric hand mixer (whisk) briefly on the lowest setting at first, then on the highest setting for around 3 minutes, until creamy. Or use a manual whisk
Bake

Grease a loaf tin (25 cm) and dust with flour. Add the dough and smooth it out.
Now bake the cake on the middle shelf of the preheated oven for around 60 minutes.
After around 15 minutes’ baking time, cut lengthwise in the middle of the cake around 1 cm deep and use a wooden skewer to check the cake is ready before taking it out of the oven.
Cool and glazed

After baking, loosen the cake from the tray and place it on a wire rack to cool. When the cake has cooled, the glaze mixture can be mixed with the lukewarm water until smooth and spread on the cake with a knife.
